Sauvignon Blanc

The grapes were selected from a vineyard with very mature vines and harvested later so not to get too much dry steely capsicum characters. Winemaking techniques have been used to create a wine in the traditional Fume’ style, it has the luscious ‘Savy’ fruit characters but also an added dimension of richness and complexity from the barrel fermentation and extended yeast contact.
